In our recipe, we did intend it to be a regular “large” store bought jar which are not very large. This would be most reasonable for the common home cook to come across as apposed to a large format from a “Costco” like store. That size would surely make more than 2 sandwiches as called for in the recipe. In our commercial kitchen we actually use #10 cans and scaled it down for the sake of the reader. When your at the store just take a look at what is available and determine what you think would reasonably fit into the hoagie rolls you are using. As products fluctuate in size we aim to make it as approachable and familiar to the readers as possible. As far as the sauce goes, the addition of the cheese and egg to some of the sauce acts as a binder to the “mixture” while the remaining sauce is used to coat the bread.
